Tofu Scramble

Reinvent conventional breakfast the vegan way with this egg-free and nutritious morning scramble!

Ingredients:


  • 1 8 oz. package of firm organic tofu
  • 1 1/2 tbsp. of nutritional yeast
  • 2 tsp. of turmeric powder
  • 1 tsp. of sunflower oil
  • 2 tbsp. of veggie cheese (optional)
  • 1/2 cup of spinach (optional)
  • Strips of veggie bacon (optional)
  • Salt to taste
  • Black pepper to taste

Directions:


  1. Heat up the oil in a pan on the stove.
  2. Open up the tofu and drain the water from the package, remove excess water from the tofu by squeezing it over the sink (you don't need to be gentle, the tofu will be crumbled into the pan).
  3. Once the oil is heated you can add the tofu by crumbling off pieces directly into the pan, and keep going until the whole tofu block is sitting in the pan in pieces.
  4. Stir the tofu around to allow the oil to coat the tofu.
  5. Add your turmeric, nutritional yeast, salt, and pepper, and stir
  6. Now is the time to add the spinach, and continue to cook until the spinach appears wilted.
  7. Once the spinach is cooked, if you want a "cheesy" scramble, add your veggie cheese.
  8. Continue to cook until the majority of the liquid from the tofu has cooked off, or evaporated.
  9. Cook your veggie bacon based on the directions from the package.
  10. Sit down and enjoy your very veggie breakfast!
