Ingredients:


Ingredients for the cookies:

  • 1 1/2 cups pecans
  • 1/2 cup oats
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • 1 tbsp coconut oil
  • 1 tbsp vanilla extract
  • Pinch of salt

Ingredients for the jam:

  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 tbsp chia seeds
  • 1 tsp honey

Directions:


  1. To make the jam, place the berries in a small bowl. Using a fork, crush the berries well. Add the remaining ingredients, mix well, and set aside.
  2. Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper.
  3. In a food processor, place pecans, oats, salt, and baking powder. Process until it forms a flour consistency.
  4. Add in maple syrup, coconut oil, and vanilla extract to the pecans. Blend and process for an extra minute or two until the dough comes together.
  5. Using a spoon or cookie scoop, make cookie balls. Place them on the baking sheet, and push down lightly with your thumb.
  6. Fill the cookie dents with homemade jam.
  7. Bake for 15-20 minutes.
