Ingredients:
Ingredients for the cookies:
- 1 1/2 cups pecans
- 1/2 cup oats
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- 1 tbsp coconut oil
- 1 tbsp vanilla extract
- Pinch of salt
Ingredients for the jam:
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tbsp chia seeds
- 1 tsp honey
Directions:
- To make the jam, place the berries in a small bowl. Using a fork, crush the berries well. Add the remaining ingredients, mix well, and set aside.
- Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper.
- In a food processor, place pecans, oats, salt, and baking powder. Process until it forms a flour consistency.
- Add in maple syrup, coconut oil, and vanilla extract to the pecans. Blend and process for an extra minute or two until the dough comes together.
- Using a spoon or cookie scoop, make cookie balls. Place them on the baking sheet, and push down lightly with your thumb.
- Fill the cookie dents with homemade jam.
- Bake for 15-20 minutes.
