Spring Garden Pasta

Ingredients:


  • 1 box of gluten-free pasta
  • 1 1/2 lbs. of fresh asparagus, trimmed
  • 2 cups of fresh or frozen peas
  • 1/4 cup of pine nuts
  • 3 cloves of garlic, minced
  • 1/2 tsp. of basil
  • 1/2 tsp. of oregano
  • 1/2 tsp. of thyme
  • 1/2 tsp. of rosemary
  • 1 tsp. pink himalayan salt
  • 1 tsp. of black pepper
  • 2 tbsp. of grated parmesan cheese or vegan parmesan alternative
  • 1 tbsp. of olive oil

Directions:


  1. Cook pasta al dente.
  2. While the pasta is boiling, add 1 tsp olive oil to a pan on medium heat. Once it starts to simmer, add asparagus, garlic, salt, and pepper for 5 minutes. Stir in peas for another 2 minutes.
  3. Reserve 1/2 cup of pasta water and drain pasta.
  4. Toss in pasta, Mediterranean spices, parmesan and remaining olive oil into the pan and mix all ingredients together on low heat.
  5. Serve immediately and enjoy!
