Ingredients:
- 1 box of gluten-free pasta
- 1 1/2 lbs. of fresh asparagus, trimmed
- 2 cups of fresh or frozen peas
- 1/4 cup of pine nuts
- 3 cloves of garlic, minced
- 1/2 tsp. of basil
- 1/2 tsp. of oregano
- 1/2 tsp. of thyme
- 1/2 tsp. of rosemary
- 1 tsp. pink himalayan salt
- 1 tsp. of black pepper
- 2 tbsp. of grated parmesan cheese or vegan parmesan alternative
- 1 tbsp. of olive oil
Directions:
- Cook pasta al dente.
- While the pasta is boiling, add 1 tsp olive oil to a pan on medium heat. Once it starts to simmer, add asparagus, garlic, salt, and pepper for 5 minutes. Stir in peas for another 2 minutes.
- Reserve 1/2 cup of pasta water and drain pasta.
- Toss in pasta, Mediterranean spices, parmesan and remaining olive oil into the pan and mix all ingredients together on low heat.
- Serve immediately and enjoy!
