  • 1/2 lb raw shrimp (remove tail)
  • 2 garlic cloves, minced
  • 1/2 tbsp of ghee
  • 1/4 tsp of chili powder
  • 1/4 tsp cayenne pepper
  • 2 small avocados
  • 1 small cucumber (peeled and diced)
  • 4 cups of your favorite leafy greens (chopped)
  • Fresh, chopped cilantro
  • Chopped walnuts to top

Dressing:

  • Olive oil
  • Juice of 1/2 lime

Directions:


  1. In a skillet, heat the ghee over medium-high heat. Add garlic, shrimp, chili powder, and cayenne pepper.
  2. Sauté for a few minutes until the shrimp turn a golden color. Set aside.
  3. Cut the avocados, peel and dice the cucumber, and chop the leafy greens.
  4. Arrange in a bowl with shrimp.
  5. Drizzle olive oil and lime juice over salad.
  6. Top with fresh cilantro and chopped walnuts.
