- 1/2 lb raw shrimp (remove tail)
- 2 garlic cloves, minced
- 1/2 tbsp of ghee
- 1/4 tsp of chili powder
- 1/4 tsp cayenne pepper
- 2 small avocados
- 1 small cucumber (peeled and diced)
- 4 cups of your favorite leafy greens (chopped)
- Fresh, chopped cilantro
- Chopped walnuts to top
Dressing:
- Olive oil
- Juice of 1/2 lime
Directions:
- In a skillet, heat the ghee over medium-high heat. Add garlic, shrimp, chili powder, and cayenne pepper.
- Sauté for a few minutes until the shrimp turn a golden color. Set aside.
- Cut the avocados, peel and dice the cucumber, and chop the leafy greens.
- Arrange in a bowl with shrimp.
- Drizzle olive oil and lime juice over salad.
- Top with fresh cilantro and chopped walnuts.
