Ingredients:
- 2 pounds of russet potatoes
- 1/4 cup of olive oil
- 1/4 tsp of oregano
- 1/4 tsp of basil
- 1/4 tsp of thyme
- 1/4 tsp of parsley
- 1/4 tsp of rosemary
- 4 garlic cloves, minced
- 1/4 cup parmesan cheese or vegan parmesan alternative
- Salt to taste
- Black pepper to taste
- Parsley to top (fresh or dried)
Directions:
- Preheat the oven to 400 degrees F. Lightly grease baking tray with a little olive oil.
- Cut the washed potatoes in quarters.
- Place the potatoes in a big bowl, add 2 tablespoons of olive oil, and mix well.
- Add the Italian seasoning blend, garlic, about a teaspoon salt, black pepper (to taste) and half the Parmesan and mix with clean hands until all ingredients are combined.
- Pour into baking dish, top with rest of Parmesan cheese and drizzle with olive oil
- Cook potatoes in oven for 1 hour making sure that halfway through, you remove from the oven, toss well, and top with extra Parmesan cheese and olive oil.
- Remove from oven, top with fresh parsley, and serve warm!
