Ingredients:
- 1/2 cups of cooked quinoa
- 1/2 can of pumpkin puree
- 12 oz. of plain Greek yogurt
- 1 tsp of vanilla extract
- 2 tbsp of crushed pecans
- 2 tbsp of maple syrup
Directions:
- In a blender or food processor, mix 10 oz. of yogurt with pumpkin puree, vanilla, and maple syrup.
- Layer half of the yogurt mix at the bottom of a glass or jar.
- Place half of the quinoa on top of the yogurt mix.
- Put remainder of yogurt mix on top of quinoa.
- On top of the yogurt mix, pour the remainder of quinoa.
- The 2 oz. of plain yogurt you have left should go after the quinoa.
- Top parfait with the crushed pecans.
