Pumpkin Pecan Parfait

Crushed pecans, nutritious quinoa, and delightful pumpkin flavor blend together for a sweet autumn treat.

Ingredients:


  • 1/2 cups of cooked quinoa
  • 1/2 can of pumpkin puree
  • 12 oz. of plain Greek yogurt
  • 1 tsp of vanilla extract
  • 2 tbsp of crushed pecans
  • 2 tbsp of maple syrup

Directions:


  1. In a blender or food processor, mix 10 oz. of yogurt with pumpkin puree, vanilla, and maple syrup.
  2. Layer half of the yogurt mix at the bottom of a glass or jar.
  3. Place half of the quinoa on top of the yogurt mix.
  4. Put remainder of yogurt mix on top of quinoa.
  5. On top of the yogurt mix, pour the remainder of quinoa.
  6. The 2 oz. of plain yogurt you have left should go after the quinoa.
  7. Top parfait with the crushed pecans.
