Ingredients:
- 2-3 large portobello mushrooms
- 3 bell peppers (yellow, red, green)
- 1 onion
- 1 tsp of cumin
- 1 tsp of chipotle
- 1 tsp of cinnamon
- Juice of 1/2 lime
- 1 tbsp olive oil olive oil
- 6 corn tortillas
For guacamole:
- 3 medium avocados
- 1 tomato
- 1/2 white onion
- 1/2 cup of chopped cilantro
- 2 tbsp of lemon juice
- Salt to taste
- Black pepper to taste
Directions:
- Cut mushrooms into thick slices.
- Slice bell peppers and onion.
- In a large skillet over medium heat, add olive oil, bell peppers and onions.
- Cook for a couple of minutes.
- Add mushrooms and spices.
- Cook vegetables until softened and add lime juice. Add salt to taste and turn off heat.
- Make guacamole: Mash with fork peeled and pitted avocados. Stir in other ingredients until evenly combined.
- Serve warm fajitas with guacamole.
