Ingredients:
- 1 tbsp of chia seeds
- 1 tbsp of hemp seeds
- 2/3 cup of oats
- 1 1/2 cup of unsalted pistachios
- 1/2 cup of agave
- 1 cup of chewy banana bites
- 10-12 pitted dates
- 1/3 cup dark chocolate chips (optional: extra to melt and drizzle on top)
Directions:
- Make date paste in food processor by blending pitted dates.
- In a bowl, add date paste, chia seeds, hemp seeds, oats, chopped pistachios, banana bites, agave, and dark chocolate chips. Mix with your clean hands or spoon until evenly combined.
- Transfer into baking dish and spread evenly, pressing down with the tip of your fingers in order for the bars to be firm.
- Place in refrigerator for 1 hour.
- Remove from refrigerator and cut into bars.
- Optional: melt ¼ cup dark chocolate chips and drizzle on top of the cut bars.
