Pistachio Dark Chocolate Banana Bars

Ingredients:


  • 1 tbsp of chia seeds
  • 1 tbsp of hemp seeds
  • 2/3 cup of oats
  • 1 1/2 cup of unsalted pistachios
  • 1/2 cup of agave
  • 1 cup of chewy banana bites
  • 10-12 pitted dates
  • 1/3 cup dark chocolate chips (optional: extra to melt and drizzle on top)

Directions:


  1. Make date paste in food processor by blending pitted dates.
  2. In a bowl, add date paste, chia seeds, hemp seeds, oats, chopped pistachios, banana bites, agave, and dark chocolate chips. Mix with your clean hands or spoon until evenly combined.
  3. Transfer into baking dish and spread evenly, pressing down with the tip of your fingers in order for the bars to be firm.
  4. Place in refrigerator for 1 hour.
  5. Remove from refrigerator and cut into bars.
  6. Optional: melt ¼ cup dark chocolate chips and drizzle on top of the cut bars.
