Ingredients:
- 1/2 cup of chia seeds
- 1 can of coconut milk
- 1 cup of pineapple chunks
- 3 tbsp of shredded coconut
- 2 tbsp of coconut oil
- 1 tsp of vanilla extract
- 2 tsp of honey
Directions:
- Mix chia seeds and coconut milk, honey, and vanilla together in a cup, and let it sit until the mixture thickens.
- Cut pineapple into chunks.
- In a pan, preheat coconut oil and add coconut shreds. (The shreds will burn fast, so take them out after a few seconds)
- Add more coconut oil to the pan and fry the pineapple for about 5 minutes, sprinkle brown sugar to taste.
- Add the pineapple on top of the chia seeds pudding, and sprinkle the rest with the golden brown coconut shreds.
