Ingredients:


  • 1/2 cup of chia seeds
  • 1 can of coconut milk
  • 1 cup of pineapple chunks
  • 3 tbsp of shredded coconut
  • 2 tbsp of coconut oil
  • 1 tsp of vanilla extract
  • 2 tsp of honey

Directions:


  1. Mix chia seeds and coconut milk, honey, and vanilla together in a cup, and let it sit until the mixture thickens.
  2. Cut pineapple into chunks.
  3. In a pan, preheat coconut oil and add coconut shreds. (The shreds will burn fast, so take them out after a few seconds)
  4. Add more coconut oil to the pan and fry the pineapple for about 5 minutes, sprinkle brown sugar to taste.
  5. Add the pineapple on top of the chia seeds pudding, and sprinkle the rest with the golden brown coconut shreds.
