Ingredients:
Crust:
- 1/4 cup of shredded coconut
- 1/2 cup pecans
- 1/2 cup of dates
- 1/2 tsp of vanilla extract
- A pinch of salt
Filling:
- 1 1/2 cups of raw cashew nuts (soak overnight)
- 1 cup of pineapple pieces
- 1/2 cup of maple syrup
- 1/3 cup of coconut oil
- 1 tsp of vanilla extract
- Juice of 1/2 a lemon
Directions:
- In a food processor, mix the ingredients for the crust.
- Take the mixture, and distribute it evenly in a muffin tray. Make sure to press down, so that the crust comes together. Let the tray with the crust set in the freezer.
- Using a food processor, mix all ingredients for the filling until you get a creamy consistency.
- Remove muffin tray from the freezer, and pour filling over the crust.
- Place the tray back in the freezer, and let it set for a couple of hours. Before serving, top with pineapple slices and shredded coconut
