Ingredients:


Crust:

  • 1/4 cup of shredded coconut
  • 1/2 cup pecans
  • 1/2 cup of dates
  • 1/2 tsp of vanilla extract
  • A pinch of salt

Filling:

  • 1 1/2 cups of raw cashew nuts (soak overnight)
  • 1 cup of pineapple pieces
  • 1/2 cup of maple syrup
  • 1/3 cup of coconut oil
  • 1 tsp of vanilla extract
  • Juice of 1/2 a lemon

Directions:


  1. In a food processor, mix the ingredients for the crust.
  2. Take the mixture, and distribute it evenly in a muffin tray. Make sure to press down, so that the crust comes together. Let the tray with the crust set in the freezer.
  3. Using a food processor, mix all ingredients for the filling until you get a creamy consistency.
  4. Remove muffin tray from the freezer, and pour filling over the crust.
  5. Place the tray back in the freezer, and let it set for a couple of hours. Before serving, top with pineapple slices and shredded coconut
