Ingredients:
Brownie layer:
- 2 tbsp ground oats
- 2 tbsp cacao powder
- 2 tbsp unsweetened applesauce
- 2 tbsp almond milk (make your own by soaking almonds)
- 2 tsp agave
- 1/4 tsp vanilla extract
Peanut butter yogurt layer:
- 1 cup dairy-free yogurt
- 1 tbsp peanut butter
- 1 tsp agave
Directions:
- In a microwave-safe mug, add the ingredients for the brownie. Mix well with a fork until the brownie batter is smooth. Microwave for 1-1 ½ minute. Allow the brownie to cool for a couple of minutes.
- Mix the yogurt ingredients in a separate small bowl.
- To make parfait: Fill the bottom of a serving glass with ¼ cup of the peanut butter yogurt layer. Top with brownie chunks. Add an extra layer of peanut butter yogurt. Top with a sprinkle of cacao powder to decorate.
