Ingredients:
- 1 cup of peanut butter
- 1/2 cup of coconut sugar
- 2 tsp of vanilla extract
- 2 eggs
- 2/3 cup of rolled oats
- 1 tsp of baking soda
- 3/4 cup of chocolate chips
Directions:
- Preheat oven to 350.
- Mix oats with baking soda in a bowl.
- In a separate bowl, mix remainder of ingredients (except chocolate chips).
- Combine both parts of ingredients and begin folding in the chocolate chips.
- Form the dough balls to about 1 1/2 to 2 inches and place them onto the cookie sheet.
- Press down to each dough ball a little to flatten them a little bit.
- Bake cookies for 10 minutes or until the edges begin to brown a little.
- Cool for 2-3 minutes and then place them on a rack to continue to cool.
