PB & Chocolate Oatmeal Cookies

These cookies are full of good-for-you oats and coconut sugar that has a low glycemic index.

Ingredients:


  • 1 cup of peanut butter
  • 1/2 cup of coconut sugar
  • 2 tsp of vanilla extract
  • 2 eggs
  • 2/3 cup of rolled oats
  • 1 tsp of baking soda
  • 3/4 cup of chocolate chips

Directions:


  1. Preheat oven to 350.
  2. Mix oats with baking soda in a bowl.
  3. In a separate bowl, mix remainder of ingredients (except chocolate chips).
  4. Combine both parts of ingredients and begin folding in the chocolate chips.
  5. Form the dough balls to about 1 1/2 to 2 inches and place them onto the cookie sheet.
  6. Press down to each dough ball a little to flatten them a little bit.
  7. Bake cookies for 10 minutes or until the edges begin to brown a little.
  8. Cool for 2-3 minutes and then place them on a rack to continue to cool.
  9. Enjoy!
