Ingredients:
- 6 egg yolks
- 2 cans of coconut milk
- 1/2 cup of maple syrup
- (alternatively use 1/2 cup of honey)
- 1 tsp of vanilla extract
- 1/4 tsp of salt
- 1/4 cup of shredded coconut
- 1/2 cup of coconut sugar
- 1/3 cup of water
Directions:
- Preheat oven to 350.
- In a saucepan, heat coconut sugar with water on medium to low heat and stir until it melts and coat the bottom of a round baking dish.
- Pour the rest of ingredients into a blender and mix well.
- Empty mixture onto the baking dish and cover with aluminum foil.
- Place dish inside a larger pan with 1 inch of water and bake for 1 hour or until a toothpick comes out clean.
- Remove aluminum foil and place round baking dish on a wire rack to cook for about an hour. Then refrigerate overnight.
- To serve, invert flan onto a large dish.
