Paleo Coconut Flan

Ingredients:


  • 6 egg yolks
  • 2 cans of coconut milk
  • 1/2 cup of maple syrup
  • (alternatively use 1/2 cup of honey)
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt
  • 1/4 cup of shredded coconut
  • 1/2 cup of coconut sugar
  • 1/3 cup of water

Directions:


  1. Preheat oven to 350.
  2. In a saucepan, heat coconut sugar with water on medium to low heat and stir until it melts and coat the bottom of a round baking dish.
  3. Pour the rest of ingredients into a blender and mix well.
  4. Empty mixture onto the baking dish and cover with aluminum foil.
  5. Place dish inside a larger pan with 1 inch of water and bake for 1 hour or until a toothpick comes out clean.
  6. Remove aluminum foil and place round baking dish on a wire rack to cook for about an hour. Then refrigerate overnight.
  7. To serve, invert flan onto a large dish.
