Ingredients:
- 2 zucchinis
- 1 cup mushrooms
- 4 plum tomatoes
- Olive oil
- 1/2 cup of Parmigiano Reggiano cheese
- 1/2 tsp of oregano
- Pinch of salt
Directions:
- Preheat the oven to 350 degrees F.
- Slice zucchinis in half lengthwise.
- Scoop out the insides of zucchinis until you create a 1/4 inch trough.
- Slice the tomatoes and mushrooms.
- Brush the inside and outside of each zucchini with olive oil.
- Place 3-4 tomatoes and mushroom slices in each zucchini boat.
- Optional: Add a thick layer of cheese to the zucchini boat.
- Top each boat with salt, oregano, and cheese.
- Bake for 25-30 min.
