Ingredients:


  • 1 1/2 pounds chicken breast, cut into cubes
  • 1 white onion, cut in big pieces
  • 2 green bell peppers, cut in big pieces
  • 1 medium zucchini
  • 3 tbsp fresh lemon juice
  • 1 tbsp of red wine vinegar
  • 1 tbsp of olive oil
  • 2 garlic cloves minced
  • 1 tsp of salt
  • 1/2 tsp of oregano
  • 1/2 tsp of basil
  • 1/2 tsp of thyme
  • 1/2 tsp of parsley
  • 1/2 tsp of rosemary

Directions:


  1. In a large bowl, whisk lemon juice, red wine vinegar, olive oil, garlic, spices, and salt and add the cubed chicken.
  2. Cover and leave in the fridge for a couple of hours or overnight.
  3. Heat the grill to medium heat.
  4. Thread chicken cubes, bell peppers, and onion onto skewers.
  5. Oil the grates of the grill, and place skewers on them.
  6. Grill for about 4 minutes, flip over, and grill the other side until the chicken is fully cooked.
  7. Serve warm.
