Ingredients:


  • 3/4 cup raw honey
  • 1/2 cup sesame seeds
  • 1/2 cup sunflower seed
  • 3/4 cup almond butter
  • 3/4 cup almond flour
  • 1/4 cup shredded coconut

Directions:


  1. Roast sesame and sunflower seeds in a preheated oven at 350º F for a few minutes until lightly brown. Make sure to stir occasionally to avoid burning.
  2. Mix almond butter and honey well in a saucepan over medium heat until warm. Turn off heat.
  3. Add almond flour, coconut shreds, and roasted seeds to the honey-butter mixture; stir.
  4. Line a baking sheet with parchment paper. Use a tablespoon to scoop balls of dough and place them on the baking sheet, making sure to flatten dough balls with the top of the spoon.
  5. Bake in the oven for seven minutes. Check occasionally to avoid burning.
  6. Remove the tray from the oven, and let it sit on a cooling rack for a couple of minutes.
