Fig Bars

Ingredients:


Filling:

  • 8 fresh black figs
  • 1 tbsp of ground flax seed

Crust:

  • 3 cups of almonds
  • 1/2 cup of ground flax seed
  • 1 cup of dates
  • 2 tsp of vanilla extract (skip if going raw)
  • 1 tbsp of agave
  • 2 tbsp of almond milk (make your own by soaking almonds)

Directions:


  1. Make filling by pulsing in food processor figs and 1 TBSP ground flaxseed until smoothly combined.
  2. For the crust, start by grinding almonds in food processor until flour consistency and pour into medium bowl.
  3. In the food processor, process dates for about 1 minute. Pour dates in medium bowl with almond.
  4. Add the rest of the ingredients in medium bowl with almond and dates and mix with clean hands until crust comes together.
  5. Cover a baking pan with parchment paper and and flatten with the tip of your fingers 2/3 of the crust mix in the pan.
  6. Top crust with fig filling and lastly, use remainder of crust mix to crumble over filling.
  7. Place in freezer for 30 minutes.
  8. Remove from freezer, lift parchment paper out of baking pan to get content out and cut into bars.
  9. Store bars in fridge.
