Ingredients:


  • 1 cup of quinoa
  • 1 can of organic coconut milk
  • 1/4 cup of water
  • 1 pinch of pink himalayan salt
  • 1 tsp. of minced garlic
  • Juice and zest of small lime
  • 1 tbsp. of chopped cilantro to top

Directions:


  1. Mix all ingredients in a small pot (except lime and cilantro) and cook accordingly to quinoa package instructions.
  2. Stir in lime juice and zest.
  3. Top with cilantro.
