Ingredients:
- 1 cup of quinoa
- 1 can of organic coconut milk
- 1/4 cup of water
- 1 pinch of pink himalayan salt
- 1 tsp. of minced garlic
- Juice and zest of small lime
- 1 tbsp. of chopped cilantro to top
Directions:
- Mix all ingredients in a small pot (except lime and cilantro) and cook accordingly to quinoa package instructions.
- Stir in lime juice and zest.
- Top with cilantro.
