Ingredients:
- 2 1/4 cups of oats
- 2 1/4 cups of of all-purpose flour
- 1 1/2 cup of coconut sugar
- 1 cup of coconut oil
- 1 1/2 tsp of baking soda
- 3 cups of organic mixed berries
- 1/4 cup of unsweetened applesauce
- 1 tbsp of tapioca flour
Directions:
- Preheat oven to 350 degrees F.
- In a medium bowl combine the oats, flour, coconut sugar, baking soda, and coconut oil. Mix until the oil is well incorporated (you can mix with your hands if you wish).
- In a medium/large baking pan, spread about 2/3 of the content and press down with your finger tips to make an even crust.
- In a medium bowl, mix the berries with the unsweetened applesauce and tapioca flour and pour over crust.
- Top with left over oatmeal mix.
- Bake for 25-30 minutes.
- Remove from oven and cut into squares after it cools down.
