Ingredients:
- 1 large head of cauliflower
- 2 free-range chicken breasts chopped in 1/2" cubes
- 1/4 tsp. turmeric powder
- 1/4 cup chopped onions
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 2 garlic cloves
- 1 tbsp. olive oil
- 3 tbsp. coconut aminos
Directions:
- Wash and dry cauliflower head well and chop.
- Place chopped cauliflower in food processor and mix until you get a rice consistency. Set aside.
- Season the chicken breasts with turmeric powder and other spices as needed and set aside.
- Heat the olive oil in a pan over medium heat and add chopped onions and garlic cloves. Cook for 5 minutes.
- Add the chicken and cook for about 10 minutes on each side.
- Reduce the heat to low and add the cauliflower rice, chopped carrots, and chopped celery and cook for about 15 minutes, stirring every 5 minutes.
- Pour the coconut aminos and stir for 2-3 minutes.
- Serve immediately or store in the refrigerator.
