Cauliflower Chicken Fried Rice

Ingredients:


  • 1 large head of cauliflower
  • 2 free-range chicken breasts chopped in 1/2" cubes
  • 1/4 tsp. turmeric powder
  • 1/4 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 2 garlic cloves
  • 1 tbsp. olive oil
  • 3 tbsp. coconut aminos

Directions:


  1. Wash and dry cauliflower head well and chop.
  2. Place chopped cauliflower in food processor and mix until you get a rice consistency. Set aside.
  3. Season the chicken breasts with turmeric powder and other spices as needed and set aside.
  4. Heat the olive oil in a pan over medium heat and add chopped onions and garlic cloves. Cook for 5 minutes.
  5. Add the chicken and cook for about 10 minutes on each side.
  6. Reduce the heat to low and add the cauliflower rice, chopped carrots, and chopped celery and cook for about 15 minutes, stirring every 5 minutes.
  7. Pour the coconut aminos and stir for 2-3 minutes.
  8. Serve immediately or store in the refrigerator.
