Ingredients:
- 2 cups of oats
- 1 tbsp of flax seed
- 1 tbsp of chia seeds
- 1/4 cup of dried blueberries
- 1/4 cup of goji berries
- 1/3 cup of macadamia nuts
- 1/2 cup of dark chocolate chips
- 1/2 cup of peanut butter
- 1/4 cup of agave
- 1 cup of plain yogurt
- 1/2 cup of unsweetened shredded coconut
Directions:
- In a food processor, pulse oats, flax seeds, chia seeds, dried blueberries, goji berries, dark chocolate chips and macadamia nuts and set aside.
- In a medium bowl, mix in peanut butter and agave until evenly combined.
- Pour dry ingredients from food processor into medium bowl with peanut butter blend.
- Using your clean hands, mix all ingredients until dough is formed.
- Mold dough into balls, cover in yogurt and place on plate.
- Sprinkle with unsweetened shredded coconut.
- Place in fridge for a few hours or until yogurt is firm.
