Apple Pie Bites

Use Greek yogurt to top off this breezy summer treat that uses coconut sugar instead of conventional sweetener.

Ingredients:


  • 1/2 cup of unsweetened apple sauce
  • 1/2 cup of almond butter
  • 1/4 cup of coconut flour
  • 3-4 tbsp of honey
  • 1/2 tbsp of cinnamon
  • 1/2 tbsp of nutmeg
  • 1 tbsp of coconut sugar
  • Vanilla Greek yogurt (if going paleo, use a non-dairy yogurt)
  • 1 apple

Directions:


  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, combine the almond butter, applesauce, coconut flour, spices and the honey. Mix very well until you get a thick batter.
  3. Dice the apple, and add it to the mix.
  4. Transfer to a greased mini muffin tin and sprinkle the coconut palm sugar on top to create a crust. Bake in the oven for 30 minutes.
  5. Set aside to cool down. Refrigerate for 1-2 hours before cutting it into small bites.
  6. Use yogurt and fruits for toppings.
