Ingredients:
For cookies:
- 2/3 cup of unsweetened shredded coconut
- 1/2 cup of whole cashew nuts
- 1/4 cup shelled almonds
- 1 tbsp. of coconut flour
- 1 tbsp. of raw almond flour
- 3 tbsp. of raw agave
- 3 tbsp. of melted coconut oil
- 1 tbsp. of cacao nibs
- 1 tbsp. of goji berries
- 1/2 tsp. of vanilla extract
For chocolate dip:
- 1/3 cup of melted coconut oil
- 3 tbsp. of raw agave
- 1/3 cup of raw cacao powder
Directions:
Directions for cookies:
- In a food processor, grind nuts with shredded coconut.
- Add remaining ingredients (except nibs and berries) and blend on high.
- Stir in cacao nibs and goji berries and press to form dough.
- Press cookie dough on parchment paper on plate and cover.
- Chill in refrigerator for 25-30 minutes.
- Use cookie cutters to form cookies and place back in fridge for an hour.
- (Optional: Dip in homemade chocolate).
Directions for chocolate dip:
- Melt coconut oil.
- Add rest of ingredients and mix well.
