Ingredients:


For cookies:

  • 2/3 cup of unsweetened shredded coconut
  • 1/2 cup of whole cashew nuts
  • 1/4 cup shelled almonds
  • 1 tbsp. of coconut flour
  • 1 tbsp. of raw almond flour
  • 3 tbsp. of raw agave
  • 3 tbsp. of melted coconut oil
  • 1 tbsp. of cacao nibs
  • 1 tbsp. of goji berries
  • 1/2 tsp. of vanilla extract

For chocolate dip:

  • 1/3 cup of melted coconut oil
  • 3 tbsp. of raw agave
  • 1/3 cup of raw cacao powder

Directions:


Directions for cookies:

  1. In a food processor, grind nuts with shredded coconut.
  2. Add remaining ingredients (except nibs and berries) and blend on high.
  3. Stir in cacao nibs and goji berries and press to form dough.
  4. Press cookie dough on parchment paper on plate and cover.
  5. Chill in refrigerator for 25-30 minutes.
  6. Use cookie cutters to form cookies and place back in fridge for an hour.
  7. (Optional: Dip in homemade chocolate).


Directions for chocolate dip:

  1. Melt coconut oil.
  2. Add rest of ingredients and mix well.

Shredded Coconut
