Ingredients:


  • 1 1/2 cups of shredded coconut
  • 1/2 cup of chocolate chips
  • 2 tbsp of maple syrup
  • 1/4 cup of coconut oil
  • 1/4 cup of almonds

Directions:


  1. Add the coconut shreds, coconut oil, and maple syrup to a food processor to create the coconut filling.
  2. Once processed, add the filling to a loaf pan lined with parchment paper.
  3. Put the mixture in the freezer for 10 minutes to solidify.
  4. While the mixture is cooling, melt the chocolate.
  5. To melt the chocolate, add enough water to cover the bottom of the pan, and place on med-high heat.
  6. In the pan, add a container with the chocolate; stir the chocolate to promote melting. Once the mixture is fully melted, remove from the heat.
  7. Once the mixture is hard, remove from the freezer, and cut into 6-8 bars.
  8. Dip each bar into chocolate on one side, and then put into the freezer for 5-7 minutes.
  9. Remove from the freezer, and top each bar with 2-3 almonds. Then, using a spoon, cover the top of the bars with chocolate.
  10. Put in the freezer for the last time for 5 minutes to harden.
  11. Enjoy!
