Ingredients:
- 1 1/2 cups of shredded coconut
- 1/2 cup of chocolate chips
- 2 tbsp of maple syrup
- 1/4 cup of coconut oil
- 1/4 cup of almonds
Directions:
- Add the coconut shreds, coconut oil, and maple syrup to a food processor to create the coconut filling.
- Once processed, add the filling to a loaf pan lined with parchment paper.
- Put the mixture in the freezer for 10 minutes to solidify.
- While the mixture is cooling, melt the chocolate.
- To melt the chocolate, add enough water to cover the bottom of the pan, and place on med-high heat.
- In the pan, add a container with the chocolate; stir the chocolate to promote melting. Once the mixture is fully melted, remove from the heat.
- Once the mixture is hard, remove from the freezer, and cut into 6-8 bars.
- Dip each bar into chocolate on one side, and then put into the freezer for 5-7 minutes.
- Remove from the freezer, and top each bar with 2-3 almonds. Then, using a spoon, cover the top of the bars with chocolate.
- Put in the freezer for the last time for 5 minutes to harden.
