Ingredients:


  • 8 ounces of baby bella mushrooms (about a box)
  • 1/2 cup of brown rice
  • 1 1/4 cups of vegetable broth
  • 1/2 a red onion, sliced
  • Olive oil
  • 1 tsp. of turmeric powder (or 1/2 more for a stronger taste)
  • A handful of fresh cilantro
  • A handful of pine nuts
  • 1/2 tbsp. of lemon juice
  • Pink himalayan salt to taste
  • Black pepper to taste

Directions:


  1. Preheat the oven to 400 degrees F.
  2. Sautee the sliced onions with a little bit of olive oil (about a teaspoon).
  3. In a baking dish, mix in the mushrooms, vegetable broth, red onion, brown rice, and turmeric. Add a teaspoon of salt and pepper, and drizzle with a little olive oil on top.
  4. Stir so that the ingredients are evenly distributed, and place in the oven for 50 minutes or until rice is tender.
  5. Remove from the oven, and top with pine nuts, lemon juice, and cilantro.
