Ingredients:
- 8 ounces of baby bella mushrooms (about a box)
- 1/2 cup of brown rice
- 1 1/4 cups of vegetable broth
- 1/2 a red onion, sliced
- Olive oil
- 1 tsp. of turmeric powder (or 1/2 more for a stronger taste)
- A handful of fresh cilantro
- A handful of pine nuts
- 1/2 tbsp. of lemon juice
- Pink himalayan salt to taste
- Black pepper to taste
Directions:
- Preheat the oven to 400 degrees F.
- Sautee the sliced onions with a little bit of olive oil (about a teaspoon).
- In a baking dish, mix in the mushrooms, vegetable broth, red onion, brown rice, and turmeric. Add a teaspoon of salt and pepper, and drizzle with a little olive oil on top.
- Stir so that the ingredients are evenly distributed, and place in the oven for 50 minutes or until rice is tender.
- Remove from the oven, and top with pine nuts, lemon juice, and cilantro.
