Ingredients:
- 1 Tofurky roast
- 4 carrots, sliced
- 4 potatoes, quartered
- 4 tbsp of coconut aminos
- 3 tbsp olive oil
- 1 tsp thyme
- 2 tsp dried rosemary
- 2 sprigs of fresh rosemary
Directions:
- Preheat the oven to 350 F.
- Remove the casing from your roast, and add to a roast pan.
- Add your sliced carrots and potatoes to your pan, surrounding your roast.
- In a small jar, create your baste by mixing the coconut aminos, olive oil, and dry herbs.
- Pour about 3/4 of the baste over the roast and vegetables.
- Cover your roast pan, and put into the oven for 1 hour.
- After an hour, add the remaining 1/4 of the baste to the pan, and bake uncovered for 10 minutes.
- Let cool and enjoy!
