Who says you need to have turkey for Thanksgiving? Enjoy this vegan twist on the classic main dish that will be the star of your family get-together.

Ingredients:


  • 1 Tofurky roast
  • 4 carrots, sliced
  • 4 potatoes, quartered
  • 4 tbsp of coconut aminos
  • 3 tbsp olive oil
  • 1 tsp thyme
  • 2 tsp dried rosemary
  • 2 sprigs of fresh rosemary

Directions:


  1. Preheat the oven to 350 F.
  2. Remove the casing from your roast, and add to a roast pan.
  3. Add your sliced carrots and potatoes to your pan, surrounding your roast.
  4. In a small jar, create your baste by mixing the coconut aminos, olive oil, and dry herbs.
  5. Pour about 3/4 of the baste over the roast and vegetables.
  6. Cover your roast pan, and put into the oven for 1 hour.
  7. After an hour, add the remaining 1/4 of the baste to the pan, and bake uncovered for 10 minutes.
  8. Let cool and enjoy!
