Ingredients:
- 1 scoop coconut milk powder + 8oz water or 1 cup coconut milk
- 1 frozen banana (or 1/2 avocado)
- 1 tbsp mct oil
- 1 scoop plant-based vanilla protein powder
- 1 tsp spirulina powder
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/2 tbsp unsweetened coconut flakes
- 1 tbsp monk fruit sweetener (optional)
Optional Toppings:
- Chia seeds
- Pumpkin seed
- Unsweetened coconut flakes
- Dried berries
Directions:
- For the coconut milk powder, mix it with water first.
- Combine coconut milk, frozen banana (or avocado), MCT oil, plant based protein powder, spirulina, vanilla extract, cinnamon, coconut flakes, and monk fruit (if using).
- Blend until smooth and creamy. If needed, add a splash of coconut milk to adjust the consistency.
- Pour the smoothie into a bowl and use a spoon to smooth out the surface.
- Top with chia seeds, pumpkin seeds, coconut flakes, or dried berries.
- Serve and enjoy!
