Spicy Buffalo Chickpea Pizza

Ingredients:


  • Pizza dough mix
  • 1 tbsp of cayenne pepper
  • 1 tsp of chili powder
  • 1 tsp of chipotle
  • 1 tsp of mustard
  • 1 tbsp of olive oil
  • 1 can of chickpeas (cooked)

For sauce:

  • 1/2 cup of cashew nuts
  • 3/4 cup of almond milk (make your own by saoking almonds)
  • 2 tbsp of tapioca flour
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 4 cloves of roasted garlic

Extra toppings for pizza:

  • Fresh basil
  • Cheese of choice
  • 1/3 onion (thinly sliced)
  • Spinach in small cuts
  • 1 tbsp of olive oil

Directions:


  1. Make pizza dough according to recipe.
  2. Preheat oven to 425 degrees F.
  3. To make buffalo chickpea: Mix buffalo blend, 1 tbsp olive oil, and cooked chickpeas. Mash a few of the chickpeas. Set aside.
  4. To make the sauce: Pulse in a blender or food processor all ingredients for sauce together until smooth.
  5. Shape pizza dough making sure the edges are thicker so the sauce doesn't spill out of the pizza. Brush olive oil over dough.
  6. To assemble pizza: start with a light layer of sauce, add spinach and slices of onion. Top with buffalo chickpeas. Add extra sauce and top with cheese of choice.
  7. Bake for 15 minutes.
  8. Drizzle with extra sauce and serve warm.
