Ingredients:


  • 1/2 cup of cooked quinoa
  • 1/2 cup of cooked black beans
  • 1/2 tsp of paprika
  • 3/4 tsp of pink himalayan salt
  • 1 1/2 tbsp of olive oil
  • 1/2 tsp of garlic powder
  • 1/4 tsp of cayenne pepper
  • 1 tsp of dried cilantro
  • 3/4 cup of chopped tomatoes
  • 1/4 mango, chopped
  • 1 medium red onion, chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 lime
  • 4-6 soft taco shells

Directions:


  1. In a skillet heat up black beans with ½ tbsp. of olive oil, salt, garlic, cayenne pepper, and dried cilantro for 5-7 minutes.
  2. In a separate bowl mix chopped mango, chopped tomatoes, ¼ tsp. salt, 1 tbsp. olive oil, chopped onions, and fresh cilantro.
  3. Fill each taco with desired amount of red quinoa, black beans and mango salsa. Squeeze lime on top of each taco.
