Ingredients:
- 1/2 cup of cooked quinoa
- 1/2 cup of cooked black beans
- 1/2 tsp of paprika
- 3/4 tsp of pink himalayan salt
- 1 1/2 tbsp of olive oil
- 1/2 tsp of garlic powder
- 1/4 tsp of cayenne pepper
- 1 tsp of dried cilantro
- 3/4 cup of chopped tomatoes
- 1/4 mango, chopped
- 1 medium red onion, chopped
- 2 tbsp fresh cilantro, chopped
- 1 lime
- 4-6 soft taco shells
Directions:
- In a skillet heat up black beans with ½ tbsp. of olive oil, salt, garlic, cayenne pepper, and dried cilantro for 5-7 minutes.
- In a separate bowl mix chopped mango, chopped tomatoes, ¼ tsp. salt, 1 tbsp. olive oil, chopped onions, and fresh cilantro.
- Fill each taco with desired amount of red quinoa, black beans and mango salsa. Squeeze lime on top of each taco.
