Ingredients:


  • 2 cups unsweetened shredded coconut
  • 6 tsp. of maple syrup
  • 4 tsp. of melted coconut oil
  • 1 tsp. of vanilla extract
  • 1 1/2 tsp. peppermint extract
  • 16 oz. dark non-dairy chocolate

Directions:


  1. Blend coconut, maple syrup, and melted oil in a blender or food processor.
  2. Add peppermint and vanilla extracts.
  3. Form 2-inch patties with your hands, and place them on a wax paper.
  4. Freeze for 15-20 minutes.
  5. Melt the chocolate, and let it cool a bit.
  6. Place patties one by one into melted chocolate, making sure to cover them on both sides.
  7. Let patties sit at room temperature for about 10 minutes. If they still need more chocolate, dip them again.
  8. Place patties back on wax paper and freeze for about 10-15 minutes.
  9. Serve cold.
