Ingredients:
- 2 cups unsweetened shredded coconut
- 6 tsp. of maple syrup
- 4 tsp. of melted coconut oil
- 1 tsp. of vanilla extract
- 1 1/2 tsp. peppermint extract
- 16 oz. dark non-dairy chocolate
Directions:
- Blend coconut, maple syrup, and melted oil in a blender or food processor.
- Add peppermint and vanilla extracts.
- Form 2-inch patties with your hands, and place them on a wax paper.
- Freeze for 15-20 minutes.
- Melt the chocolate, and let it cool a bit.
- Place patties one by one into melted chocolate, making sure to cover them on both sides.
- Let patties sit at room temperature for about 10 minutes. If they still need more chocolate, dip them again.
- Place patties back on wax paper and freeze for about 10-15 minutes.
- Serve cold.
