No-Bake Pumpkin Spice Bites

Ingredients:


  • 2 cups of rolled oats
  • 2 tbsp of coconut sugar (or any granulated sweetener )
  • 1 tbsp of pumpkin spice
  • 3/4 cup of pumpkin puree
  • 1 tsp of vanilla extract
  • 1/4 cup of cashew butter (or nut butter of choice)
  • 1/4 cup of maple syrup (or any syrup sweetener of choice)
  • 1 tbsp of almond milk (make your own by soaking almonds)

Directions:


  1. Grind oats in a food processor or blender until they turn to flour.
  2. Mix oat flour, granulated sweetener, and pumpkin spice together in a bowl.
  3. In a separate bowl, mix the nut butter and syrup sweetener, and heat it up in the microwave or on the stovetop. Add in the vanilla extract, and stir.
  4. Combine the wet and dry mixtures, and mix well. If the consistency is too dry, add milk. If the mixture is too runny, add more flour.
  5. Using your hands, shape the mixture into bite-size balls; place them in a single layer on a baking sheet. Refrigerate for at least 15 minutes to make them firm up.
  6. Optional: Toss the balls in a mixture of cinnamon and granulated sweetener to coat.
