Ingredients:
- 2 cups of rolled oats
- 2 tbsp of coconut sugar (or any granulated sweetener )
- 1 tbsp of pumpkin spice
- 3/4 cup of pumpkin puree
- 1 tsp of vanilla extract
- 1/4 cup of cashew butter (or nut butter of choice)
- 1/4 cup of maple syrup (or any syrup sweetener of choice)
- 1 tbsp of almond milk (make your own by soaking almonds)
Directions:
- Grind oats in a food processor or blender until they turn to flour.
- Mix oat flour, granulated sweetener, and pumpkin spice together in a bowl.
- In a separate bowl, mix the nut butter and syrup sweetener, and heat it up in the microwave or on the stovetop. Add in the vanilla extract, and stir.
- Combine the wet and dry mixtures, and mix well. If the consistency is too dry, add milk. If the mixture is too runny, add more flour.
- Using your hands, shape the mixture into bite-size balls; place them in a single layer on a baking sheet. Refrigerate for at least 15 minutes to make them firm up.
- Optional: Toss the balls in a mixture of cinnamon and granulated sweetener to coat.
