Ingredients:
- 1 cup of oats
- 3/4 cup of oat flour or ground oats
- 1 1/2 tsp. of baking powder
- 1 pinch of pink himalayan salt
- 3 tbsp. of melted coconut oil
- 1 large egg
- 2 tsp. of vanilla extract
- 6 tbsp. of honey
- Juice and zest of 1 small lemon
Directions:
- Preheat oven to 375 F and line baking sheet with parchment paper.
- Mix all dry ingredients in a bowl.
- In a separate bowl, mix all wet ingredients.
- Combine dry and wet ingredients and stir well.
- Let cookie dough chill in the refrigerator for 30 minutes.
- Scoop out cookie dough using spoons and flatten out.
- Bake for 10-15 minutes.
- Cool cookies for 10 minutes before serving.
