Lemon Oatmeal Cookies

Ingredients:


  • 1 cup of oats
  • 3/4 cup of oat flour or ground oats
  • 1 1/2 tsp. of baking powder
  • 1 pinch of pink himalayan salt
  • 3 tbsp. of melted coconut oil
  • 1 large egg
  • 2 tsp. of vanilla extract
  • 6 tbsp. of honey
  • Juice and zest of 1 small lemon

Directions:


  1. Preheat oven to 375 F and line baking sheet with parchment paper.
  2. Mix all dry ingredients in a bowl.
  3. In a separate bowl, mix all wet ingredients.
  4. Combine dry and wet ingredients and stir well.
  5. Let cookie dough chill in the refrigerator for 30 minutes.
  6. Scoop out cookie dough using spoons and flatten out.
  7. Bake for 10-15 minutes.
  8. Cool cookies for 10 minutes before serving.
