Ingredients:


  • 1 lb ground turkey (or meat substitute)
  • 1 jar of tomate sauce
  • 1 yellow onion
  • 1 green pepper
  • 2-3 garlic cloves
  • 1 tsp of cumin
  • 1 can low sodium black beans
  • 1-2 cups quinoa
  • 1 avocado (optional)
  • Salt to taste
  • Black pepper to taste

Directions:


  1. Place onion, green pepper, garlic and tomato sauce in food processor until liquid
  2. Heat saucepan over medium to medium high heat. Add the meat (or meat substitute), cumin and sofrito. Cook for 20‐30 minutes, or until most of the sofrito is absorbed. Stir occasionally. Season with salt and pepper to taste.
  3. Cook Quinoa according to package instrucons.
  4. Heat canned beans in a small sauce pan over medium heat.
  5. Serve quinoa, picadillo, and black beans together
  6. Enjoy!
