Ingredients:
- 2 1/4 teaspoons activated yeast
- 1 cup warm filtered water
- 3 tsp sea salt
- 1 tbsp maple syrup
- 3 tbsp olive oil
- 3 1/2 cups gluten free all-purpose flour
- 1 tbsp baking soda
Directions:
- Combine the warm water and yeast in a mixing bowl
- Allow to sit for 5 minutes and then add 1 tsp salt, 1 tsp oil olive, 1 tbsp maple syrup, stir
- Slowly add the flour to the mixture and combine until you are able to form a dough ball
- Prepare your surface by sprinkling flour, and begin to work with the dough by kneeding
- Coat a clean mixing bowl with oil, and add the ball of dough. Cover the dough with a towel and let rise for about 45 mins
- Cut the dough into even pieces, and roll out into 2 foot long strands
- Cut the strands into even pieces for your pretzel bites, about 1 1/2 inches long
- Bring a pot of water to boil, and then baking soda and 2 tsp salt
- Preheat the oven to 425 F
- In the boiling water, add your pretzel bites for 30 seconds and then remove and add to a prepared baking sheet with parchment paper
- When on the parchment paper, coat with olive oil and add a the remaining salt
- Bake for 15-20 minutes or until golden brown
- Let cool, and serve with a delicious mustard dipping sauce
