Freekeh Casserole with Broccoli & Cheese

Ingredients:


  • 3/4 cup of freekeh
  • 1/2 medium white onion
  • 2 heads of broccoli
  • 1/3 cup mushroom gravy
  • 1 cup almond milk (make your own by soaking almonds)
  • 1 cup shredded cheese
  • 1 tsp of coconut oil
  • 1 tsp of salt
  • 1/2 tsp of black pepper

Directions:


  1. Bring 2 cups of water to boil and add 3/4 cup of freekeh. Bring heat down to medium-low and cover pot with lid letting the grain simmer for about 20 minutes or until water is absorbed. Remove from stove and set aside.
  2. Preheat oven to 350 degrees F.
  3. Sautee onions in coconut oil. Add chopped broccoli and cook until it turns brighter green (a couple of minutes). Add salt, pepper, mushroom gravy,milk, and cheese and stir well. When all ingredients are combined, remove from stove and combine with cooked Freekeh.
  4. Transfer the mix into a casserole baking dish and top with a little bit more of cheese.
  5. Bake for about 12 minutes.
