Crunchy Coconut Pecan Granola

Ingredients:


  • 3 cups of rolled oats
  • 1/2 cup of sesame seeds
  • 1/2 cup of unsweetened shredded coconut
  • 1/2 cup of flax seed
  • 3/4 cup of agave
  • 1 cup of chopped pecans
  • 1 tbsp of coconut oil

Directions:


  1. Preheat oven to 400 degrees F.
  2. In a large bowl, mix all the ingredients until combined.
  3. Place granola in a baking pan (make sure to cover baking pan with parchment paper).
  4. Bake for 20 minutes (or until golden) making sure to safely stir granola occasionally so that all of granola is consistently crunchy and golden. For crunch fanatics: after the granola baked for 20 minutes, I turned off the oven and left the granola in there with oven door closed for about 20 extra minutes. This made it a little crunchier.
  5. Let cool and store in air tight container.
