Cinnamon Oat Bran Bread

Ingredients:


  • 3/4 cup of oat bran
  • 4 tbsp. of cinnamon
  • 4 free-range eggs
  • 10 tbsp. plain greek yogurt
  • 2 tsp. baking powder
  • 1 cup of coconut sugar
  • 1/4 tsp. of vanilla extract
  • Coconut oil to coat the pan

Directions:


  1. Preheat oven to 350 F.
  2. Mix all dry ingredients in bowl.
  3. Add eggs and yogurt and mix well until smooth.
  4. Grease an 8 x 4 bread loaf pan with coconut oil and pour in mixture.
  5. Bake for 40 minutes or until you insert a knife and it comes out clean.
