Ingredients:
- 3/4 cup of oat bran
- 4 tbsp. of cinnamon
- 4 free-range eggs
- 10 tbsp. plain greek yogurt
- 2 tsp. baking powder
- 1 cup of coconut sugar
- 1/4 tsp. of vanilla extract
- Coconut oil to coat the pan
Directions:
- Preheat oven to 350 F.
- Mix all dry ingredients in bowl.
- Add eggs and yogurt and mix well until smooth.
- Grease an 8 x 4 bread loaf pan with coconut oil and pour in mixture.
- Bake for 40 minutes or until you insert a knife and it comes out clean.
