
Cacao & Date Protein Bars
These bars taste like a treat rich, full of deep cocoa flavor, and just sweet enough from soft dates and creamy almond butter. They’re made with real ingredients like cacao, plant-based protein, MCT oil, and chia seeds to keep you going. No baking, no weird stuff, just a quick, nourishing bite you’ll actually look forward to.
Ingredients:
- 1 cup soft dates; if dry, soak in warm water and drain
- 1/2 cup almond butter
- 1 scoop chocolate or vanilla plant-based protein blends
- 1/4 cup cacao powder
- 1/4 cup cacao nibs
- 1/4 cup coconut flour
- 2 tbsp mct oil
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 2 tbsp shredded coconut
Optional Toppings:
- 1 tbsp roasted pumpkin seed
Directions:
1. Add the dates and almond butter to a food processor. Blend until smooth and sticky.
2. Add the protein powder, cacao powder, coconut flour, MCT oil, chia seeds, cacao nibs, vanilla, and sea salt. Blend again until a thick dough forms.
3. Taste and adjust if needed, more cacao for richness, a pinch more salt, or a splash of vanilla.
4. Press the dough evenly into a small glass or silicone container (lightly greased if needed with MCT oil).
5. Sprinkle with shredded coconut and pumpkin seeds.
6. Keep in the fridge for 10–15 minutes, then slice into bars.
