Ingredients:


  • 2 cups of fresh chopped broccoli
  • 3 organic eggs
  • 1 tsp of salt
  • 1/2 tsp of garlic powder
  • 1 small chopped shallot
  • 1/2 tsp of oregano
  • 1/2 tbsp of flax seed
  • Black pepper to taste
  • 1 cup of shredded cheese of choice
  • 1 cup of oat flour (make your own by grinding oats)

Directions:


  1. Preheat oven to 400 degrees F.
  2. Make your own oat flour by grinding oats in food processor.
  3. In a medium bowl, whisk the eggs. Mix in salt, garlic powder, shallot, oregano, flaxseed, and white pepper.
  4. Lastly, add shredded cheese, oat flour, and broccoli. Mix with spoon until evenly combined.
  5. Fill muffin cups with mix.
  6. Bake for 15 minutes.
  7. Note: Best when served warm.
