Banana Cinnamon Rolls

Ingredients:


  • 4 browning bananas
  • 1 cup dates
  • 1/2 cup water
  • 1/2 tsp vanilla extract
  • 1 tsp cinnamon

Directions:


  1. Preheat oven to 250F.
  2. In a small bowl, allow dates and vanilla to soak in water.
  3. Slice the bananas lengthwise into 3 strips each.
  4. Lay out the slices on baking trays lined with parchment paper.
  5. Bake bananas for 1 hour.
  6. Remove from the oven and let them cool for a few minutes.
  7. Gently, using a knife, release each slice from the pan and flip them over.
  8. Blend in a food processor dates, water, and vanilla until a paste is formed.
  9. Spread about 1 tablespoon of date paste down the length of a banana slice, sprinkle with a bit of cinnamon and roll. Place roll on baking tray with parchment paper. Repeat for remaining banana slices.
  10. Return them to the oven for 1.5 hours at 250F.
  11. Remove from the oven and allow to cool.
  12. If not eaten immediately, refrigerate.
