Ingredients:
- 4 browning bananas
- 1 cup dates
- 1/2 cup water
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
Directions:
- Preheat oven to 250F.
- In a small bowl, allow dates and vanilla to soak in water.
- Slice the bananas lengthwise into 3 strips each.
- Lay out the slices on baking trays lined with parchment paper.
- Bake bananas for 1 hour.
- Remove from the oven and let them cool for a few minutes.
- Gently, using a knife, release each slice from the pan and flip them over.
- Blend in a food processor dates, water, and vanilla until a paste is formed.
- Spread about 1 tablespoon of date paste down the length of a banana slice, sprinkle with a bit of cinnamon and roll. Place roll on baking tray with parchment paper. Repeat for remaining banana slices.
- Return them to the oven for 1.5 hours at 250F.
- Remove from the oven and allow to cool.
- If not eaten immediately, refrigerate.
