Ingredients:
For the crust (makes 6 tarts):
- 1/4 cup of shredded coconut
- 1/2 cup of chopped pecans
- 1/2 cup of dates
- 1 teaspoon of lime zest
For the filling (makes 6 tarts):
- 1 1/2 cup of sliced avocado
- 1/4 cup of honey
- 1 tbsp. of coconut oil
- Juice of 1 lime
Directions:
- In the food processor, mix the ingredients for the crust.
- Take mixture and distribute evenly in a muffin tray. Make sure to press down so that the crust comes together. Let tray with crust set in freezer.
- In the food processor, mix the ingredients for the filling until you get a creamy consistency.
- Remove muffin tray from freezer and pour filling over the crust.
- Place tray in the freezer and let set for a couple of hours before enjoying this yumminess!
