Whole Wheat Dinner Rolls (Yields 24 Rolls)
Ingredients:
• 4 1/2 - 5 Cups ARROWHEAD MILLS WHOLE WHEAT FLOUR
• 1 1/2 Tbsp INSTANT YEAST
• 1/2 Cup (4 oz) SOFTENED BUTTER
• 1/4 Cup HONEY
• 2 EGGS
• 1 Cup WARM MILK
• 1 Tbsp SALT
Instructions:
1. PREHEAT oven to 375°F. Prepare 9x13 inch pan by spraying with non-stick cooking spray.
2. COMBINE 4 1/2 cups wheat flour and yeast. Add warm milk‚ honey‚ eggs‚ and salt. Mix to combine. Add additional 1/2 cup of flour by tablespoonful if dough is too wet. Dough should be slightly sticky. For stand mixer with dough hook‚ mix until dough forms and continue mixing on medium speed for 3 minutes. If mixing by hand‚ mix in bowl until combined‚ then turn out onto floured surface and knead for 5 minutes.
3. LET dough rest for 30 minutes covered‚ at room temperature.
4. TURN dough out onto lightly floured surface. Press dough into a rectangle and cut into 24 equal pieces. Shape each piece into a ball. Place 24 dough balls into prepared 9x13 inch pan‚ edges should be touching.
5. COVER and let rise for 1 hour. Bake in preheated oven for 25-30 minutes or until golden brown.
6. REMOVE from oven and brush top with melted butter (optional).
Banana Nut Muffins (Yields 15 Muffins)
Ingredients:
• 1 1/2 Cup ARROWHEAD MILLS WHOLE WHEAT FLOUR
• 3/4 Tsp BAKING SODA
• 1/2 Tsp SALT
• 1/4 Tsp BAKING POWDER
• 2 EGGS
• 1/2 BUTTER‚ MELTED
• 1/3 Cup HONEY
• 2 VERY RIPE BANANAS‚ PEELED AND MASHED
• 1/2 WALNUTS OR PECANS‚ CHOPPED
• 1/2 CINNAMON (OPTIONAL)
Instructions:
1. PREHEAT oven to 350°F. Line muffin pan with paper liners.
2. IN a large bowl‚ whisk together flour‚ baking soda‚ salt‚ baking powder‚ and cinnamon. In a medium bowl‚ whisk together eggs‚ melted and cooled butter‚ honey‚ and mashed bananas. Add wet mixture to flour mixture. Stir just until combined.
3. GENTLY fold in nuts.
4. FILL muffin liners about halfway. Bake for 16 to 18 minutes or until toothpick inserted into center comes out clean.
*Directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted.
