Gluten-Free Lemon Blueberry Muffins (Yields 6 Muffins)
Ingredients:
• 1/4 Cup ARROWHEAD MILLS TAPIOCA FLOUR
• 1/4 Cup ARROWHEAD MILLS COCONUT FLOUR
• 1/4 Cup GRANULATED SUGAR
• 1/2 Tsp BAKING POWDER
• 3 LARGE EGGS
• 3 Tbsp BUTTER‚ MELTED
• 1/4 Tsp SALT
• 1/2 Tsp VANILLA EXTRACT
• 2 Tsp LEMON ZEST
• 1/2 Cup FRESH BLUEBERRIES
Instructions:
1. PREHEAT oven to 400°F. Line muffin pan with paper liners or lightly coat with nonstick spray. Set aside.
2. IN a large bowl‚ whisk together coconut flour‚ tapioca flour‚ sugar‚ salt‚ and baking powder.
3. STIR in eggs‚ melted butter‚ vanilla‚ and lemon zest. Mix until smooth.
4. GENTLY fold in blueberries.
5. DIVIDE batter evenly into muffin pan. Bake 16-18 minutes or until toothpick inserted into the center comes out clean.
Gluten-Free Chocolate Pudding (Yields 6-8 Servings)
Ingredients:
• 4 1/2 Tbsp ARROWHEAD MILLS TAPIOCA FLOUR
• 1 Cup GRANULATED SUGAR
• 1/2 Cup COCOA POWDER
• 2 Tbsp BUTTER OR BUTTER ALTERNATIVE
• 4 Cups WHOLE MILK OR NON-DAIRY MILK ALTERNATIVE
• 1/4 Tsp SALT
• 1 Tbsp VANILLA EXTRACT
Instructions:
1. IN a medium saucepan combine sugar‚ cocoa powder‚ salt‚ and tapioca flour. Whisk together to combine dry ingredients.
2. GRADUALLY add the milk. Whisk together and bring to a boil over medium heat. Once it comes to a boil‚ boil for 1 minute‚ whisking constantly.
3. REMOVE pudding from the heat and whisk in vanilla extract and butter.
4. PLACE in a bowl or desired container. Cover and chill until cooled completely.
