According to free radical theory‚ organisms age because of damage done by free radicals‚ atoms or molecules with an unpaired electron in the outer shell. Free radicals are produced as the result of normal cell function: when your cells produce energy‚ they also create unstable oxygen molecules; that molecule then bonds with others‚ preventing proteins and other important compounds from functioning properly. The damage caused by this cross-linking accumulates‚ eventually contributing to the changes you see in your body that you associate with the visible signs of aging.
Antioxidants‚ in effect‚ work by absorbing or soaking up the free radicals‚ by surrendering their electrons to those free radicals. Unlike free radicals‚ however‚ an antioxidant doesn’t begin scavenging for a new electron it loses one of its own electrons to its molecule. This means that instead of upsetting the existing balance‚ it becomes a benign substance.
Antioxidants include a whole range of vitamins and minerals found mostly in fresh fruits and vegetables. Different foods offer different antioxidants; for example‚ orange vegetables like carrots may contain carotenoids‚ while dark green leafy vegetables may provide lutein.
